Dipotassium Phosphate is a potassium salt. It is a natural mineral and we add Dipotassium Phosphate to our Unsweetened, Original, Barista and Vanilla products to regulate the pH (acidity). Without the Dipotassium Phosphate the product would curdle in coffee and tea as they generally have a low pH (pH <5) which causes a separation of the fat and liquid within pea m*lk. An acidity regulator is therefore an essential addition in plant-based m*lk alternatives if they are aimed to be used in coffee, tea or for cooking.
Many acidity regulators can be used in foods. We have chosen an acidity regulator with characteristics that match our pea m*lk by adding natural minerals to the product while not affecting the smooth and neutral taste of our pea m*lk.
Dipotassium Phosphate is regarded as a safe additive to use in foods and is approved by EFSA (European food safety authority), FDA (U.S. Food and Drug Administration) and other similar authorities all around the world.
We do not add Dipotassium Phosphates to Sproud Chocolate products since cacao naturally has a similar ability to regulate the acidity in the product.
