Rhubarb compote

  • 2 rhubarb stalks
  • 1 tbsp sugar
  • 50 ml water
  • 1 tbsp chia seeds

Frozen smoothie

For serving

  • Sliced banana
  • Roasted seeds or granola

STEP BY STEP 

  1. Cut the rhubarb in small pieces and put in a pot with the rest of the ingredients.
  2. Bring to a boil and let boil at a low heat for a couple of minutes. Let it cool.
  3. Mix the smoothie ingredients. Layer the smoothie with the rhubarb compote and top with granola or seeds.
